Vicki's Vanishing Oatmeal Raisin
Cookies
1 cup "smart choice" margarine (no trans fat),
softened
1 cup firmly packed brown sugar (splenda)
1/2 cup granulated sugar (splenda)
3 eggs
1 Tbsp. vanilla
1 -1/2"cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker Oats (quick or old fashioned,
uncooked)
2 cups raisins
handful of pecans chopped up
Heat oven to 350 degrees F.
Beat together margarine and sugars until creamy
Add eggs and vanilla; beat well.
Add combined flour, baking soda, cinnamon and salt;
mix well.
Stir in oats and raisins and nuts; mix well.
Drop by rounded tablespoonfuls onto sprayed cookie
sheet (butter spray)
Bake 10 to 12 minutes on cookie sheet; remove to
wire rack.
For chewy cookies do not bake too long.
Cool 1 minute on cookie sheet; put them on a plate
to cool.
Makes 4 dozen
