Quick & Easy Tortilla Soup
1/2 - 1 lb. of ground beef
1 cup chopped onion
1 can 16 oz. diced tomatoes
1 can 16 oz. pinto beans, drained
1 can 8 oz. tomato sauce 1 cup water
1 cup picante sauce 1/4 tsp. ground cumin
Toppings:
Crushed tortilla chips
Shredded cheddar cheese
Shredded lettuce
Sour cream
Brown meat with onion in soup pot, drain well. Add rest of ingredients and bring
to a boil; reduce heat. Cover and simmer for 10 minutes. Ladle into bowls and
then add chips, cheese, lettuce and sour cream in order.
Mmmmmmm Tasty!!
I usually double this recipe so I have plenty left over. When doubling I usually
use about 1 1/2 pounds of ground beef and a heaping cup of chopped onions.
Everything else I double. You can also put this in a crockpot and cook it on low
all day if you like.
